Ethiopia is where coffee began -- and the Sidama Zone is where it has always been at its most extraordinary. Smallholder farmers tending indigenous heirloom cultivars in rich Nitisol soil at elevations between 1,700 and 1,900 meters. Sorted by hand. Dried naturally on raised beds the slow, unhurried way that lets the full fruit of the coffee cherry sink into every bean.
Milk chocolate and caramel give it warmth and depth. A wild, natural fruitiness runs through the middle that no washed process could ever replicate.
